Happy Birthday to YOU good sir.
I distinctly remember the first time I listened to The Smiths being 16 and ball room dancing with some boy from Providence RI in a Pequannock (nj) parking lot to ‘This Charming Man’. Hatful of Hollow has been my favorite album of theirs since.

Yummy (and quick) breakfast quinoa:
I made a batch of red quinoa ahead of time, so this took two seconds to put together.
-3 oz cooked red quinoa (Trader Joe’s)
-1/4 cup vanilla almond milk (Almond Breeze)
-1/8 cup raisins
-Cinnamon
Since this is an at work breakfast, I nuked it for about 2 minutes. Ideally you’d want to put it over a low simmer. Substitute almond milk for regular milk, coconut milk, hemp milk etc. Really great alternative to oatmeal and very filling.

Man creates comparison because ego is possible only if nourished by comparison continuously. But then you will have two outcomes: sometimes you will feel superior, and sometimes you will feel inferior. And the possibility of feeling inferior is greater than the possibility of feeling superior, because there are millions of people: somebody is more beautiful than you, somebody is taller than you, somebody is stronger than you, somebody seems to be more intelligent than you, somebody is more learned than you, somebody is more successful, somebody is more famous, somebody is this, somebody is that. If you just go on comparing, millions of people… you will gather a great inferiority complex. But it doesn’t exist, it is your creation.

Southwestern stuffed peppers
what you need:
-6 medium sized bell peppers
-1 package spanish yellow rice (optional, made a batch with and without)
-1 1/2 lb lean all natural ground beef (can also use ground turkey)
-1 can black beans
-1 can yellow corn
-Green onion
-Olive oil
-Sea salt
-Chili powder
-Fresh lime juice
-Fresh cilantro
-Shredded cheddar cheese
-Sour cream (can use full fat greek yogurt as an alternative)

what to do
-Start cooking rice during prep time
-Slice red bell peppers in half, removing the seeds. 
-Mix chopped onion, black beans and corn together in a large bowl. Add sea salt, chili powder and lime juice to the mix.
-Put the ground beef (or turkey) in a large skillet with 2 tbl of olive oil. Start breaking up the meat with a spoon. Cook until the meat is no longer pink.
- Stir in the onion/bean/corn mixture with the beef *this is where you can add the cooked rice as well*
-Scoop ground beef and additions into the bell pepper halves and line them on a baking sheet.
-Sprinkle cheddar cheese on top
-Roast in a pre-heated oven at 350 for 7-15 minutes or until the peppers begin to brown on top.
-Garnish with sour cream or greek yogurt, fresh cilantro and a lime.

*Depending on the size of your bell peppers, you will probably have left over rice and ground beef.
